This variation of a classic Penicillin cocktail swaps out the Scotch for SILO Hayloft whiskey with a splash of SILO Maple Whiskey for a smokey sweetness. The lemon juice and lemon-ginger syrup are the key ingredients to the restorative Hot Toddy, which inspired the name Penicillin but with Vermont twist.
Serves six 3-oz shots
- 10oz SILO Hayloft
- 5oz fresh lemon juice
- 5oz lemon-ginger syrup
- 1oz SILO Maple Whiskey
- Candied ginger for garnish (optional)
Combine all of the ingredients in a glass pitcher and stir to combine. Cover and refrigerate for 4 hours. Pour 3 oz into a pill bottle or small jar and keep refrigerated or chilled over ice. To serve, simply sip from the jar or pour contents over a king ice cube in a double old fashioned and garnish with a piece of candied ginger.
