Rainbow Rita

Ingredients:
1 1/2 oz. blanco tequila
1 oz. elderflower liqueur
2 oz. fresh pink grapefruit juice
1/2 oz. fresh lime juice

Garnishes:
simple syrup
blue salt*
green salt*
yellow salt*
red salt*
lime wheel

Directions:
Pour a small amount of simple syrup on a small plate. Using a teaspoon, lay down strips of colored salt to create a rainbow strip of purple, blue, green, yellow, orange and red salts. Coat half of the rim of the tumbler glass with simple syrup and slowly roll the coated rim across the salt rainbow stripes to coat the rim in a rainbow of colored salt Fill the shaker with ice and add the tequila, elderflower liqueur, grapefruit and lime juice, shaking until well chilled. Pour the contents of the shaker tin into the prepared tumbler and garnish with a lemon and lime wheel.

*Colored Salts
1/2 c. kosher salt
Liquid food coloring

Place the salt in a small resealable plastic bag. Add 3-5 drops of food coloring (see color chart below). Seal the bag and massage the food coloring into the salt until evenly distributed. Spread colored salt onto to a lined cookie sheet and allow to dry over night or for 15-20 mins in a 200º F oven. Store in an airtight container until ready to use.

Blue Salt: 25 drops blue food coloring
Green Salt: 12 drops green food coloring
Yellow Salt: 12 drops yellow food coloring
Red: 20 drops red food coloring
